Hawaiian Macaroni Salad

Ingredients

  • 2 cups milk

  • 2 cups mayonnaise

  • 1 tbsp brown sugar

  • 2 tbsp Dijon mustard

  • 1 tsp sea salt

  • 2 tsp coarse black pepper

  • 1 tsp each of granulated onion powder and granulated garlic powder

  • 1 pound (4 cups) elbow macaroni

  • 1/2 cup white vinegar

  • 1 large carrot, or 2 small, peeled and grated

  • 1 large, or 2 small celery ribs, finely chopped

  • 4 green onions, thinly sliced

Directions

  • Whisk together the milk, mayonnaise, sugar, mustard, salt, pepper, onion and garlic powder together in a bowl.
  • Boil the pasta in salted water for about 10 minutes until soft. Drain pasta, then place in a large bowl and add the vinegar. Mix until vinegar is absorbed. Let sit and cool for about 10 minutes.
  • Stir about 3/4 of the dressing and mix until coated. Add the carrots, celery and scallions. Mix well. Cover and chill for about 30 min to 1 hour.
  • Stir in rest of the dressing. Mix until evenly coated. Chill until ready to serve. Can make it 2 days in advance and store in fridge until ready to serve. Enjoy!
