Ingredients
1 pound ground beef
2 bell peppers, chopped
1 small onion, chopped
1 tbsp olive oil
2 minced garlic cloves
1 tbsp dried oregano
1/2 tsp dried dill
1 1/2 tsp sea salt
1 tsp pepper
2 tbsp tomato paste
1/2 cup raw long grain white rice, rinsed
15oz canned diced tomatoes
1/2 cup water
1/2 cup shredded cheese
1/4 cup chopped fresh parsley
Directions
- Heat oil in a large pot over medium heat. Add the ground beef, breaking it apart for a couple of minutes. Then add onions, peppers, garlic, oregano, dill, salt and pepper.
- Cook until beef is browned, a few more minutes. Add tomato paste and stir well.
- Add the rice, canned tomatoes and water. Stir well. Bring to a boil.
- Reduce heat to low, cover and cook for around 25 minutes, until rice is tender.
- Sprinkle with cheese and parsley. Cover until cheese just melts. Enjoy!
