Unstuffed Peppers

Ingredients

  • 1 pound ground beef

  • 2 bell peppers, chopped

  • 1 small onion, chopped

  • 1 tbsp olive oil

  • 2 minced garlic cloves

  • 1 tbsp dried oregano

  • 1/2 tsp dried dill

  • 1 1/2 tsp sea salt

  • 1 tsp pepper

  • 2 tbsp tomato paste

  • 1/2 cup raw long grain white rice, rinsed

  • 15oz canned diced tomatoes

  • 1/2 cup water

  • 1/2 cup shredded cheese

  • 1/4 cup chopped fresh parsley

Directions

  • Heat oil in a large pot over medium heat. Add the ground beef, breaking it apart for a couple of minutes. Then add onions, peppers, garlic, oregano, dill, salt and pepper.
  • Cook until beef is browned, a few more minutes. Add tomato paste and stir well.
  • Add the rice, canned tomatoes and water. Stir well. Bring to a boil.
  • Reduce heat to low, cover and cook for around 25 minutes, until rice is tender.
  • Sprinkle with cheese and parsley. Cover until cheese just melts. Enjoy!
