Ingredients
2 pounds potatoes, peeled and cut into large chunks
6 tbsp ghee or butter, melted
1/2 tsp each of granulated garlic powder and granulated onion powder
1/4-1/2 tsp dried rosemary
1/2 tsp sea salt
1/4 tsp pepper
1/4 cup freshly grated parmesan cheese
Garnish chopped fresh parsley
Directions
- Boil the potatoes until tender, about 15-20 min. Drain and put the lid on the pot and shake up the potatoes until they have rugged edges.
- In a small bowl, whisk together the melted ghee and spices. Pour over the potatoes and stir. Add the parmesan and stir until the potatoes are well coated with everything.
- Scrape all the potato mixture onto a lined, greased sheet pan. Spread out evenly.
- Bake at 425 for around 20 min. Stir around, bake for another 10-15min or so, until browned and crispy. Enjoy!
