Crispy Roasted Potatoes

Ingredients

  • 2 pounds potatoes, peeled and cut into large chunks

  • 6 tbsp ghee or butter, melted

  • 1/2 tsp each of granulated garlic powder and granulated onion powder

  • 1/4-1/2 tsp dried rosemary

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

  • 1/4 cup freshly grated parmesan cheese

  • Garnish chopped fresh parsley

Directions

  • Boil the potatoes until tender, about 15-20 min. Drain and put the lid on the pot and shake up the potatoes until they have rugged edges.
  • In a small bowl, whisk together the melted ghee and spices. Pour over the potatoes and stir. Add the parmesan and stir until the potatoes are well coated with everything.
  • Scrape all the potato mixture onto a lined, greased sheet pan. Spread out evenly.
  • Bake at 425 for around 20 min. Stir around, bake for another 10-15min or so, until browned and crispy. Enjoy!
