Peanut Rice Noodles With Chicken

Ingredients

  • For the sauce:
  • 1/2 cup natural peanut butter

  • 1/2 cup soy sauce

  • 2 tbsp gochujang paste

  • 2 tbsp sesame oil

  • 2 tbsp rice vinegar

  • 2 tbsp honey

  • 1 inch fresh ginger, grated

  • 4 minced garlic cloves

  • 1/4 cup water

  • For the Noodles:
  • 16oz dried rice noodles, soaked in warm water for at least an hour

  • 2 tbsp oil

  • 1 lb boneless skinless chicken thighs, cut into cubes

  • 1 onion, sliced

  • 1 bell pepper, sliced

  • 2 tsp dried basil

  • 1/4 cup fresh chopped cilantro

Directions

  • Mix sauce ingredients very well until smooth. Set aside.
  • In a large wok, heat oil on medium high heat. Add chicken pieces in one layer, without stirring for a few minutes until it gets some colour.
  • Add the onions and bell peppers and basil. Stir well for a couple more minutes, until onions and peppers soften a bit.
  • Drain the noodles and add to the pan
  • Add the sauce, and stir very well, until noodles are very well coated in the sauce, and noodles are tender and have absorbed most of the sauce, 3-5 minutes.
  • Add the cilantro. Enjoy!
