Ingredients
- For the sauce:
1/2 cup natural peanut butter
1/2 cup soy sauce
2 tbsp gochujang paste
2 tbsp sesame oil
2 tbsp rice vinegar
2 tbsp honey
1 inch fresh ginger, grated
4 minced garlic cloves
1/4 cup water
- For the Noodles:
16oz dried rice noodles, soaked in warm water for at least an hour
2 tbsp oil
1 lb boneless skinless chicken thighs, cut into cubes
1 onion, sliced
1 bell pepper, sliced
2 tsp dried basil
1/4 cup fresh chopped cilantro
Directions
- Mix sauce ingredients very well until smooth. Set aside.
- In a large wok, heat oil on medium high heat. Add chicken pieces in one layer, without stirring for a few minutes until it gets some colour.
- Add the onions and bell peppers and basil. Stir well for a couple more minutes, until onions and peppers soften a bit.
- Drain the noodles and add to the pan
- Add the sauce, and stir very well, until noodles are very well coated in the sauce, and noodles are tender and have absorbed most of the sauce, 3-5 minutes.
- Add the cilantro. Enjoy!
