One Pan Chicken and Potatoes

Ingredients

  • 2-2 1/2 pounds chicken thighs and drumsticks

  • 1 1/2 pounds potatoes, chopped

  • 1/4 cup olive oil

  • 1/4 cup lemon juice

  • 4-6 minced garlic cloves

  • 1 tsp Arabic 7 spice

  • 1 1/2 tsp paprika

  • 1/2 tsp each granulated onion and garlic powder

  • 1 tsp sumac

  • 2 tsp sea salt

  • 1 tsp pepper

Directions

  • In a 9×13 baking dish, mix together all the ingredients, making sure the chicken and potatoes are coated well.
  • Place potatoes in a layer, then chicken pieces on top.
  • Bake for 45-50 minutes, basting the chicken with the sauce a couple of times, until potatoes are tender. If needed, broil for a couple of minutes if you want the chicken darker. Enjoy!
