Bangers and Mash

Ingredients

  • This mashed potato recipe, or the one on Laura Vitale’s site (recipe linked under title) or your favorite recipe.
  • 1 large onion, thinly sliced

  • 4 large sausages (optionally cut into 2-3 pieces)

  • 3 minced garlic cloves

  • 3 tbsp flour

  • 2 tbsp butter or ghee

  • 1/4 cup red wine

  • 1 3/4 cup chicken stock

  • 1 tbsp worsestershire sauce

  • 1/4 tsp sea salt

  • 1/4 tsp pepper

Directions

  • Make this mashed potato recipe or your favorite recipe. Set aside.
  • In a pan, add 1 tbsp oil (if sausages are lean) and brown the sausages all over for several minutes. Remove and set aside.
  • In the same pan, add 2 tbsp butter or ghee. Add the sliced onion and the salt and pepper and saute until golden brown.
  • Add the flour and stir until well coated. Then pour in the wine and add garlic and simmer for a couple of minutes.
  • Add the chicken stock and bring to a boil, lower heat and simmer until thickened.
  • Add the worsestershire sauce and the browned sausages along with their juices. Simmer until sausages are fully cooked through, a couple more minutes.
  • Serve with the mashed potatoes and green peas if desired. Enjoy!
