Kofta and Potato Stew (Lebanese)

Ingredients:

  • For the Kofta
  • 1/2 cup parsley leaves

  • 1 onion, coarsely chopped

  • 4 garlic cloves, coarsely chopped

  • 2 pounds ground beef

  • 1 tbsp 7 spice

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp cinnamon

  • 1/2 tsp chili flakes

  • 2 tsp sea salt

  • 1/2 tsp pepper

  • To make the stew:
  • 2 tbsp olive oil

  • 1 1/2 pounds potatoes, peeled and sliced

  • 1 large onion, sliced

  • 2 tomatoes, chopped

  • 1 tbsp sea salt, or to taste

  • 1/2 tsp pepper

  • 1 tsp sugar

  • 1/4 tsp cinnamon

  • 1/2 a green pepper, or cubanelle, sliced

  • 3 1/2 cups of tomato passata

  • 2 cups water

Directions

  • In a food processor, place the parsley, garlic and onion. Pulse until finely chopped. Set aside.
  • In a bowl, add the ground beef. Add the parsley/garlic/onion mixture, and the rest of the kofta ingredients. Mix with your hands very well until well incorporated and smooth. Form meatballs or patties. It makes around 12.
  • In a large pan, heat oil. Add the patties and cook until starting to brown on the bottom. Shake it up a little, then add the sliced onions, cooking for a couple more minutes until onions start to soften. Nestle in the potatoes, being careful not to break apart the koftas.
  • Add the rest of the stew ingredients, stirring until incorporated. Bring to a boil, reduce heat, cover and simmer for around 30 minutes. Serve with rice if desired. Enjoy!
