Ingredients
1 pound boneless skinless chicken thighs, cut into bite sized pieces
1 small onion, diced
1/2 tsp sea salt
1/4 tsp pepper
2 tbsp olive oil
1/2 cup freshly grated parmesan cheese
15oz passata
2 minced garlic cloves
1 tsp Italian seasoning
1/2 tsp dried basil
1/2 tsp oregano
1/2 tsp each of granulated onion powder and garlic powder
1 1/2 – 2 tsp sea salt
1/2 tsp chili flakes
3 cups water
12 oz dried pasta
1/2 cup heavy cream
1 cup shredded cheddar or Mozzerella and fresh basil (if you have)
Directions
- Season chicken pieces with salt and pepper and mix well.
- In a large pot over medium heat, add oil. Add chicken pieces and brown for a couple of minutes. Add the freshly grated parm and the onions. Stir well. Continue to cook until onions have softened.
- Add the passata, water, all the seasonings and garlic. Stir well, bring to a boil. Add the dried pasta, stirring until well coated. Cover with lid and simmer on medium low heat until pasta is cooked, around 10 minutes.
- Uncover, stir in cream and cheese. Stir until melted. Turn heat off. Stir a couple more times until cream is absorbed, but pasta is still saucy. Enjoy!
