One Pot Chicken Parm Pasta

Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite sized pieces

  • 1 small onion, diced

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

  • 2 tbsp olive oil

  • 1/2 cup freshly grated parmesan cheese

  • 15oz passata

  • 2 minced garlic cloves

  • 1 tsp Italian seasoning

  • 1/2 tsp dried basil

  • 1/2 tsp oregano

  • 1/2 tsp each of granulated onion powder and garlic powder

  • 1 1/2 – 2 tsp sea salt

  • 1/2 tsp chili flakes

  • 3 cups water

  • 12 oz dried pasta

  • 1/2 cup heavy cream

  • 1 cup shredded cheddar or Mozzerella and fresh basil (if you have)

Directions

  • Season chicken pieces with salt and pepper and mix well.
  • In a large pot over medium heat, add oil. Add chicken pieces and brown for a couple of minutes. Add the freshly grated parm and the onions. Stir well. Continue to cook until onions have softened.
  • Add the passata, water, all the seasonings and garlic. Stir well, bring to a boil. Add the dried pasta, stirring until well coated. Cover with lid and simmer on medium low heat until pasta is cooked, around 10 minutes.
  • Uncover, stir in cream and cheese. Stir until melted. Turn heat off. Stir a couple more times until cream is absorbed, but pasta is still saucy. Enjoy!
