Tea Time Scones

Ingredients

  • 2 cups all purpose flour

  • 1/4 cup granulated sugar

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup of cold butter cut into cubes

  • 1/2 cup raisins

  • 1 egg

  • 1/2 cup heavy cream mixed with 1 1/2 tsp white vinegar
    plus 2 tbsp of heavy cream to brush on top as well as a sprinkling of sugar

Directions

  • In a large mixing bowl of a stand mixer with paddle attachment, mix together the flour, sugar, baking powder, baking soda and salt. Or you can do it by hand.
  • While mixer is slowly running, add in the cold butter pieces. Let is mix until butter pieces are the size of peas.
  • In a separate bowl, whisk together the heavy cream with vinegar and egg.
  • While mixer is running on low speed, pour in the wet mixture until dough is almost formed, add the raisins until spread evenly in the dough.
  • Turn dough out on lightly floured surface, roll into 3/4 inch thick round. Cut out rounds using a 2 1/2 inch round cookie cutter. Place rounds on a parchment lined baking sheet.
  • Brush tops with heavy cream and a sprinkling of sugar. I usually place the sheet in the freezer for 5-10 minutes to firm them up.
  • Bake in a 400 degree oven for around 15 min, or until golden brown. Transfer to a rack to cool completely. Enjoy!
