Ingredients
2 tbsp olive oil
1 onion, diced
1 large carrot, diced
2 celery stalks, diced
2 minced garlic cloves
1 tsp cumin
1 tsp coriander
3 tsp sea salt
1 tsp pepper
1 bay leaf
1/2 a cabbage, chopped
1 cup passata
8 cups chicken stock
1 tbsp lemon juice
1/4 cup chopped fresh parsley
Directions
- In a large pot, heat oil. Add the onions, carrot and celery. Cook for a few minutes.
- Add the garlic and spices and stir for another minute.
- Add the cabbage and stir for about 5 minutes, until a little wilted.
- pour in the tomato passata and stock and bring to a boil. Then loweer heat and let simmer uncovered for around 10 minutes, or until all veggies are tender.
- Stir in lemon juice and parsley. Enjoy!
