Ingredients
1/2 a pound (8oz) of ground beef
1 small onion, diced1/2 bell pepper, chopped
8 eggs
1 tsp sea salt
1/2 tsp pepper
1 tsp granulated garlic powder
1/2 tsp smoked paprika
1/2 cup shredded cheddar cheese
Directions
- Preheat the oven to 400 degrees. In a bowl, whisk together the eggs, salt, pepper and spices. Set aside.
- In an 8 inch non stick pan over medium heat, add the ground beef, cook, breaking it up until half way browned.
- Add the onions and bell peppers. Cook until softened and the beef is fully browned, about 3-5 minutes.
- Pour in the egg mixture, spread everything evenly, sprinkle cheese on top, turning heat to low, and cook for another minute. Turn heat off.
- Carefully transfer the skillet to the oven. Bake for about 9-10 minutes, until it’s not jiggly. Let rest for a couple of minutes before cutting. Enjoy!
