Ingredients
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon (Optional)
1/2 tsp salt
2 eggs
1/2 cup brown sugar
1/4 cup white sugar
1 1/2 tsp vanilla extract
1/4 cup vegetable/canola oil, melted butter or coconut oil
1/4 cup sour cream
3 ripe bananas, mashed
1/2 cup chocolate chips or more (optional)
Directions
- Line a 9×5 inch loaf pan with parchment and spray with oil.
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon (if using) and salt. Set aside.
- In a bowl, whisk together the eggs, sugars, vanilla extract, oil, sour cream and the mashed bananas. Fold in the dry ingredients. Fold in the chocolate chips. Do not over mix.
- Pour into the loaf pan and spread evenly. If desired sprinkle a few chocolate chips on top.
- Bake at a 350 degree oven for around 55 minutes or until a toothpick inserted in the middle comes out clean. Enjoy!
