Ingredients<br>Quinoa:
1 cup raw quinoa, rinsed and drained
1 1/4 cup water
1/2 tsp sea salt
1/2 tsp sumac
- Harissa Tuna:
2 5oz cans tuna
3 tbsp harissa paste
1/2 cup plain yogurt
- Cucumber and Tomato Salad:
1 cup halved cherry tomatoes
1/2 an english cucumber, diced
1/2 small red onion, diced
2 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
1 tsp sumac
1/2 tsp sea salt, 1/2 tsp pepper
2 tbsp chopped fresh parsley
Tahina dressing and/or a lemon vinaigrette
- Other add ins:
Hummus
red pepper
feta cheese
sundried tomatoes
olives
hearts of palm or artichokes
Directions
- Cook quinoa. Place rinsed and drained quinoa with salt and water in a small saucepan. Bring to a boil, reduce heat to low, cover and cook for 15 minutes. Turn off heat, let sit covered for 5 more min. Stir in the sumac, cool, then proceed with rest of recipe.
- Prepare tuna by mixing ingredients together. Set aside.
- Mix the salad ingredients together. Set aside.
- Put together your bowls with the extra toppings of choice and some dressing. You can use rice instead of quinoa as well. Enjoy!
