
Ingredients<br>For the quinoa
1 cup uncooked quinoa, rinsed and drained
1 1/4 cup water
1 tsp sea salt
- Dressing
2 tbsp fresh lemon juice
2 tbsp red wine vinegar
1/4 cup olive oil
1 tsp dijon mustard
1 garlic clove, minced1/2 tsp sea salt
1/4 tsp pepper
1/2 tsp oregano
- For the salad and assembly
1/2 an english cucumber, diced
1/2 small red onion, diced
2 cups cherry tomatoes, whole or halved
1 cup pitted kalamata olives
1/2 cup crumbled feta cheese
Directions
- In a pan, add water, quinoa and salt. Bring to boil, then bring heat to low, cover and cook for 15 minutes. Turn heat off and let sit covered for 5 minutes. Fluff with fork. Cook completely.
- In a large bowl, whisk together dressing ingredients.
- Add the quinoa, red onion, cucumber, cherry tomatoes, kalamata olives and feta cheese. Toss everything together well. Enjoy!
