Greek Quinoa Salad

Ingredients<br>For the quinoa

  • 1 cup uncooked quinoa, rinsed and drained

  • 1 1/4 cup water

  • 1 tsp sea salt

  • Dressing
  • 2 tbsp fresh lemon juice

  • 2 tbsp red wine vinegar

  • 1/4 cup olive oil

  • 1 tsp dijon mustard
    1 garlic clove, minced

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

  • 1/2 tsp oregano

  • For the salad and assembly
  • 1/2 an english cucumber, diced

  • 1/2 small red onion, diced

  • 2 cups cherry tomatoes, whole or halved

  • 1 cup pitted kalamata olives

  • 1/2 cup crumbled feta cheese

Directions

  • In a pan, add water, quinoa and salt. Bring to boil, then bring heat to low, cover and cook for 15 minutes. Turn heat off and let sit covered for 5 minutes. Fluff with fork. Cook completely.
  • In a large bowl, whisk together dressing ingredients.
  • Add the quinoa, red onion, cucumber, cherry tomatoes, kalamata olives and feta cheese. Toss everything together well. Enjoy!
