Ingredients
1 1/2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 egg
3/4 cup pumpkin puree
1 cup buttermilk
2 tbsp melted butter
3 tbsp pure maple syrup
1 1/2 tsp vanilla
Directions
- I a medium bowl, whisk together the flour, baking powder, baking soda, salt and spices.
- In a small bowl, whisk together the egg, pumpkin puree, buttermilk, melted butter, maple syrup and vanilla.
- Whisk wet ingredients into the dry ingredients.
- Ladle about 1/4 cup for each pancake into a skillet. Cook 2-3 minutes on each side. Enjoy!
