1/2 cup pumpkin puree
1/2 cup unsweetened coconut milk
1/4 cup pure maple syrup
1/4 cup melted coconut oil
2 tsp vanilla
1/3 cup coconut sugar
3 cups rolled oats
2 tsp baking powder
1/4 tsp salt
2 tsp pumpkin pie spice
3/4 cup semi-sweet chocolate chips
- In a bowl, add all ingredients except oats, baking powder, and chocolate chips. Whisk until smooth.
- Add the oats, baking powder, and chocolate chips. Stir in with a spatula until incorporated.
- Fill muffin liners and bake at 350 for around 20-23 minutes. Enjoy!
