Oatmeal Pumpkin Chocolate Chip To-Go Muffins

Ingredients

  • 1 egg

  • 1/2 cup pumpkin puree

  • 1/2 cup unsweetened coconut milk

  • 1/4 cup pure maple syrup

  • 1/4 cup melted coconut oil

  • 2 tsp vanilla

  • 1/3 cup coconut sugar

  • 3 cups rolled oats

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 2 tsp pumpkin pie spice

  • 3/4 cup semi-sweet chocolate chips

Directions

  • In a bowl, add all ingredients except oats, baking powder, and chocolate chips. Whisk until smooth.
  • Add the oats, baking powder, and chocolate chips. Stir in with a spatula until incorporated.
  • Fill muffin liners and bake at 350 for around 20-23 minutes. Enjoy!
