Sweet and Spicy Beef and Veggie Udon Noodles

Ingredients

  • For the Beef:
    1 pound sliced beef sirloin tip

  • 1 tbsp cornstarch

  • 1 tsp baking soda

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

  • 2 tsp shaoxing wine


  • For the sauce:
    4 garlic cloves, minced

  • 2 tbsp fresh minced ginger

  • 2 tbsp hoisin sauce

  • 4 tbsp sugar

  • 1/2 cup soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp water

  • 1 tbsp Sriracha sauce

  • For The Udon Noodles

  • 4 pkgs (280z) udon noodles

  • 1 tbsp sesame oil

    For The Stir-Fry:

  • 2 tbsp grapeseed oil

  • 1 onion, chopped

  • 120 grams sliced mushrooms

  • 1 large carrot, thinly sliced

  • 1 red bell pepper, sliced

  • The marinated beef

  • The noodles

  • The sauce


Directions

  • In a small bowl, mix beef ingredients together, set aside.
  • In a small bowl, or measuring cup, whisk the sauce ingredients together. Set aside.
  • Boil udon noodles until they just come apart, about 2 minutes. Drain well and toss with 1 tbsp sesame oil. Mix well. Set aside.
  • In a wok or large pan, heat oil. Add beef in one layer, cook for 3-5 minutes, or until nicely browned.
  • Add the onion and mix. Then add mushrooms and carrots. Cook for another 2 minutes.
  • Add the bell pepper and stir to combine.
  • Add noodles and pour the sauce on them. Mix very well until noodles are well coated with sauce. Enjoy!
