Ingredients
For the Beef:
1 pound sliced beef sirloin tip1 tbsp cornstarch
1 tsp baking soda
1/2 tsp sea salt
1/4 tsp pepper
2 tsp shaoxing wine
For the sauce:
4 garlic cloves, minced2 tbsp fresh minced ginger
2 tbsp hoisin sauce
4 tbsp sugar
1/2 cup soy sauce
1 tbsp sesame oil
1 tbsp water
1 tbsp Sriracha sauce
For The Udon Noodles
4 pkgs (280z) udon noodles
1 tbsp sesame oil
For The Stir-Fry:2 tbsp grapeseed oil
1 onion, chopped
120 grams sliced mushrooms
1 large carrot, thinly sliced
1 red bell pepper, sliced

Directions
- In a small bowl, mix beef ingredients together, set aside.
- In a small bowl, or measuring cup, whisk the sauce ingredients together. Set aside.
- Boil udon noodles until they just come apart, about 2 minutes. Drain well and toss with 1 tbsp sesame oil. Mix well. Set aside.
- In a wok or large pan, heat oil. Add beef in one layer, cook for 3-5 minutes, or until nicely browned.
- Add the onion and mix. Then add mushrooms and carrots. Cook for another 2 minutes.
- Add the bell pepper and stir to combine.
- Add noodles and pour the sauce on them. Mix very well until noodles are well coated with sauce. Enjoy!
