Ingredients<br><br>For the Quinoa:
1 cup quinoa, rinsed and drained
1 1/4 cups water
1/2 tsp sea salt
- Dressing:
1/4 cup fresh lemon juice
2 tbsp extra virgin olive oil
1/2 tsp sea salt
1/2 tsp pepper
1 tsp dried mint
1 tsp sumac
- To Assemble:
1 avocado, diced
1/4 cup finely diced red onion
1 cup halved grapes
3/4 cup crumbled feta cheese
Directions
- In a saucepan, add quinoa, water and salt. Bring to a gentle boil, lower heat and cover. Cook for 15 minutes. Turn heat off. Let sit, covered for another 5 minutes. Fluff with fork. Cool.
- In a bowl, whisk the dressing ingredients together.
- To the dressing, add the avocado and red onion. Coat well.
- Add the quinoa, grapes and feta cheese. Stir well. Enjoy!
