Grape, Feta And Avocado Quinoa Salad

Ingredients<br><br>For the Quinoa:

  • 1 cup quinoa, rinsed and drained

  • 1 1/4 cups water

  • 1/2 tsp sea salt

  • Dressing:
  • 1/4 cup fresh lemon juice

  • 2 tbsp extra virgin olive oil

  • 1/2 tsp sea salt

  • 1/2 tsp pepper

  • 1 tsp dried mint

  • 1 tsp sumac

  • To Assemble:
  • 1 avocado, diced

  • 1/4 cup finely diced red onion

  • 1 cup halved grapes

  • 3/4 cup crumbled feta cheese

Directions

  • In a saucepan, add quinoa, water and salt. Bring to a gentle boil, lower heat and cover. Cook for 15 minutes. Turn heat off. Let sit, covered for another 5 minutes. Fluff with fork. Cool.
  • In a bowl, whisk the dressing ingredients together.
  • To the dressing, add the avocado and red onion. Coat well.
  • Add the quinoa, grapes and feta cheese. Stir well. Enjoy!
