2 1/2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1 tbsp homemade pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
3/4 cup granulated sugar
3/4 cup brown sugar
1 1/2 cups pure pumpkin puree
1/2 cup buttermilk
1/2 cup melted coconut oil
1 1/2 tsp vanilla
- In a large bowl, whisk together the flour, spices, baking powder, baking soda, salt and both sugars. Set aside.
- In a medium bowl or large measuring cup, whisk together the eggs, pumpkin puree, buttermilk, coconut oil and vanilla extract.
- Mix the wet ingredients into the dry until just combined.
Fill lined muffin tins with the batter using an ice cream scoop.
- Bake at 350 for 20-22 minutes. Enjoy!
