Cajun Chicken and Veggie Sheet Pan Dinner

This dish is so quick and easy, and delicious! The addition of red bell pepper would be really nice here, I didn’t have any on hand, but you can switch up the veggies to your taste! I have also added sweet potato. I used my homemade Cajun-Creole seasoning in this dish. You can get the recipe here-Homemade Cajun-Creole Seasoning

 

Ingredients:

For the chicken:

10-12 Chicken thighs/legs

1 tbsp homemade Cajun Spice mix

1 tsp sea salt

1/4 tsp pepper

2 tbsp grapeseed oil

For the veggies:

3 large potatoes, chopped

1 large carrot, chopped

1 small butternut squash (about 1 1/2 pounds-1 3/4 pound), chopped

2 onions, sliced

4 garlic cloves, smashed

1 1/2 tsp sea salt

1/4 tsp pepper

2 tbsp homemade Cajun spice mix

1/2 cup chicken stock

Instructions:

  1. In a large bowl, mix the chicken pieces with the Cajun seasoning, salt, pepper and oil. Mix well and set aside.
  2. In another large bowl, Mix the veggies with the garlic, Cajun seasoning, salt, pepper and oil. Mix very well until everything is coated.
  3. On a large sheet pan, lined and sprayed with oil, add the chicken pieces. Then place veggies all around the chicken pieces. Pour the chicken stock all over. Everything should be in one layer.
  4. Cook in a 400 degree oven for around 40 minutes, or until chicken is cooked through, and veggies are tender and caramelized. Enjoy!
