Royal Icing

I love decorating cookies. Here is the recipe I use to decorate with. Different techniques of piping and decorating require different consistencies of icing. Thin it out with a little water at a time to get the right consistency for each technique! I used this recipe in my baby onesie cookies, snowman face cookies, gingerbread house cookiesgingerbread men cookies, and Christmas Deer Cookies. 

Ingredients:

4 cups icing sugar

1/2 tsp cream of tartar

3 tbsp meringue powder

1 tbsp wilton color flow

(or just use 1 more tbsp of meringue powder)

1/2 tsp pure vanilla extract

1 1/2 tsp clear vanilla extract

2 tbsp lemon juice

2 tbsp water

3-4 more tbsp water

Instructions:

  1. In a bowl of a stand mixer, mix icing sugar, cream of tartar, and meringue powder Mix together.
  2. Then add the lemon juice, and 2 tbsp water
  3. While mixer is going, add 3-4 tbsp more of water until consistency is similar to toothpaste.
  4. Whip on med-high speed for around 5 minutes. Now it’s time to colour if desired, and thin some out for flooding a cookie. Enjoy!
