Royal Icing

Royal Icing

I love decorating cookies. Here is the recipe I use to decorate with. Different techniques of piping and decorating require different consistencies of icing. Thin it out with a little water at a time to get the right consistency for each technique! I used this recipe in my baby onesie cookies, snowman face cookies, gingerbread house cookiesgingerbread men cookies, and Christmas Deer Cookies.

Sugar cookie recipe is also available to use this icing on.

4 cups icing sugar

4 tbsp meringue powder

1 1/2 tsp imitation butter flavour

1 1/2 tsp clear vanilla extract

1 tbsp lemon juice

3 tbsp water

More water when needed for detail piping and flood consistency

4 little squirts of white gel food colouring

  1. In a bowl of a stand mixer, add icing sugar and meringue powder. Mix together.
  2. Then add the lemon juice, extracts and water.
  3. Add the water gradually until consistency is similar to toothpaste.
  4. Whip on med-low speed for around 4 minutes. Now it’s time to colour if desired, and thin some out for flooding a cookie. Enjoy!
