Ingredients:
2 tbsp grapeseed oil
1 large onion, sliced
¼ tsp sugar
½ tsp kosher sea salt
¼ tsp pepper
½ tsp smoked paprika
2 minced garlic cloves
1 green pepper, sliced
2 cups shredded leftover roast
3 cups shredded cheddar cheese
6-8 large tortillas
Instructions:
1.) Heat oil in large skillet.
2.) Add onions. Cook for about 3 minutes.
3.) Add sugar. Cook for another 3-5 minutes.
4.) Add salt, pepper and smoked paprika. Stir to coat.
5.) Add garlic and stir.
6.) Add the peppers. Cook for another 3 minutes, or until peppers are just starting to soften.
7.) Stir in the beef and set aside.
8.) In a large clean pan, place one tortilla on the pan. Turn on heat.
9.) Spread the beef mixture to cover tortilla, leaving a half inch border at the edge of the tortilla.
10.) Sprinkle with cheese. Place the other tortilla on top.
11.) After a few minutes, when tortilla starts to get colour and cheese starts to melt, turn it over.
12.) Cook until the other side gets golden brown, and cheese is fully melted. Cut into 4 triangles.
13.) Repeat with the rest of filling and tortillas.
