Double Pie Crust

Double Pie Crust

I use this crust for my apple pie recipe here-https://www.iftheovenmittfits.com/2018/10/13/apple-pie/

Ingredients:
3 cups flour
2 tbsp cornstarch
1 tsp salt
2 tbsp sugar
1 1/4 cups very cold, unsalted butter, diced
1 tbsp lemon juice or vinegar
Up to 6-12 tbsp ice water. You may or may not use all of it, depending on when the dough holds together, or you may need more.

Instructions:
1. In a food processor, add flour, cornstarch, salt and sugar. Pulse to mix.
2. Add the butter cubes, and pulse until the butter is in pea sized pieces.
3. Transfer mixture to a bowl, and add lemon juice and water, a little at a time, mixing, until the dough can just hold together.
4. Wrap in plastic wrap, and freeze for an hour, or put in the fridge overnight. Cut the dough into 2 equal pieces. Then it’s ready to use for a bottom and top for a pie, or just a bottom. You can freeze the other half for another pie. Enjoy!
