½ a large English cucumber, grated
½ tsp kosher sea salt
2 cups strained Balkan style yogurt. Strained from a 750gram Yogurt container for a couple of hours.
2 garlic cloves, minced
1 tsp kosher sea salt
¼ tsp pepper
1-2 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
¼ cup chopped fresh mint leaves
1.) In a colander, place grated cucumber and sprinkle with the salt. Let sit for about 30 minutes.
2.) Put the cucumber in a paper towel or dish cheesecloth, and squeeze out the excess liquid as much as you can. Add to the yogurt in a bowl.
3.) Add garlic, salt, pepper, lemon juice, olive oil and mint leaves. Stir well. Enjoy!
