Simple Nut Free Granola (updated version)
Ingredients:
3 cups rolled oats
½ cup shredded sweetened coconut
¼ cup sunflower seeds
¼ cup pumpkin seeds
1/2 cup any nuts (optional if nut free is not needed)
1-2 tsp cinnamon
1/2 tsp sea salt
¼ cup dried cranberries (add in after baking)
4 tbsp coconut oil
½ cup pure maple syrup
1 tsp vanilla
Instructions:
1.) Preheat oven to 300. Line a large baking sheet with parchment paper. Set aside.
2.) In a large bowl, mix the oats, coconut, sunflower and pumpkin seeds, salt, and cinnamon. Mix well. Set aside.
3.) In a small pan, melt the coconut oil. Add the maple syrup. Turn heat off. Mix in the vanilla.
4.) Pour over the oat mixture. Mix very well. Pour onto baking sheet and spread out in a single layer.
5.) Bake for 30 minutes, rotating the pan once. If you want clusters, don’t stir the mixture at all. If you want it more loose, then stir once or twice.
6.) Let cool completely on the baking sheet. Then break apart. Store in an airtight container, or a glass jar. Enjoy!
This next granola recipe is similar, but I use it more because I don’t need nut free. It’s slightly adapted from here- https://natashaskitchen.com/homemade-granola/
Ingredients (Makes 6 cups)
Instructions:
- Line an 18×13 inch baking sheet with parchment.
- In a large bowl, mix the oats, almonds and seeds, coconut flakes, cinnamon and salt. Mix well.
- In a small pan, heat the honey, maple syrup and oil just until oil is melted. Take off heat. Add vanilla.
- Pour mixture over the oat mix, and make sure everything is well combined. Pour out onto the baking sheet. Bake in a 325 degree oven for around 20-23 minutes, stirring once in between.
- Cool completely on sheet before breaking apart and placing in an airtight container. Enjoy!
