Ingredients:
1 Tbsp grape seed oil
1 small onion, diced
4 cups cauliflower rice
3/4 cup shredded carrot
1 garlic clove, minced
1 tsp minced ginger
1/2 tsp sugar
1/4 tsp chili flakes
1 Tbsp soy sauce
1 Tbsp Tamari (dark soy sauce)
1/2 tsp sesame oil
2 eggs, beaten
1/2 tsp kosher salt(if needed)
Directions:
1. Heat oil in pan. Sauté onions for about 3 min.
2. Add carrot and cook for 2 min.
3. Add garlic, ginger, sugar and chili flakes. Cook 1 min
4. Add cauliflower and cook 1 min. Add soy sauces and sesame oil. Cook for another minute or two.
5. Push everything to one side of pan. Add eggs, and scramble, then mix into cauliflower mixture.
6. Add edamame and salt. Stir, and enjoy!
