Spicy Homemade BBQ Sauce

Ingredients:
2 tbsp grapeseed oil
1 small onion, chopped
4 garlic cloves, minced
1 bay leaf
1 tsp chipotle powder
1 tsp smoked paprika
1 tbsp Mexican chili powder
1 cup ketchup
1/4 cup white vinegar
1/4 cup Worcestershire sauce
2 tbsp Dijon mustard
1 tbsp pure maple syrup
1 tbsp molasses
1/4-1/2 tsp liquid smoke
1/4 tsp kosher sea salt (or to taste)
1/8 tsp pepper (or to taste)
2 tbsp water (or more to get desired consistency)
1 tbsp fresh lemon juice

Instructions:
1.) In pot, heat oil. Add onion. Cook for a few minutes until onions have some colour.
2.) Add garlic and bay leaf. Cook for another minute.
3.) Stir in spices and mix well.
4.) Add ketchup, vinegar, Worcestershire, Dijon, maple syrup, molasses and liquid smoke. Stir well and simmer for a few minutes. If it’s too thick, you can add the water at this point instead of at the end.
5.) Remove bay leaf and transfer to a measuring cup.
6.) Purée with an immersion blender, or use a food processor, until smooth.
7. Stir in the lemon juice. Makes 2 cups.
