Homemade Jamaican Curry Powder

I love making my own spice mixes! This one is so fragrant because the whole seeds are toasted first, then ground. I used this in my Jamaican Butternut Squash and Chickpea Curry!

I also have used this in my Jamaican Curry Chicken recipe!

Ingredients-Whole spices

3 Tbsp Coriander seed

3 Tbsp Cumin seed

1 1/2 tbsp allspice berries

1 1/2 tbsp cloves

1 tbsp mustard seed

1 tbsp star anise

1 tbsp funugreek seed

1 tbsp black peppercorns

 

Ingredients-Ground spices

4 tbsp turmeric

2 tbsp ginger

2 tbsp garlic powder

1 tbsp onion powder

1-2 tbsp chili flakes

1 tbsp cinnamon

2 tbsp brown sugar

Instructions:

1.) In a small pan, on low heat, toast the whole spices until fragrant, being careful not to burn them. Using a mortar and pestle, or spice grinder, grind to a powder.

2.) Mix the ground spices together.

3.) Put all the spices in a jar to store.

Feel free to half the recipe, if you know you won’t use it often, although it lasts so long! Enjoy!
