UPDATED VERSION BELOW:
2 small garlic cloves, minced
3 Tbsp Dijon mustard
1 Tbsp honey
1 tsp sea salt
1/2 tsp pepper
1 Tbsp homemade greek seasoning * (optional)
1/4 cup fresh lime or lemon juice
1/2 cup red wine vinegar, balsamic, or white wine vinegar
(or 3/4 cup a mix of what you like)
1 cup extra virgin olive oil
1. In tall measuring cup add all salad dressing ingredients.
2. Using immersion blender, purée until smooth. You can also do this in a food processor. This makes around 2 cups of dressing.
3. Transfer to jar. Shake well before drizzling on salad.
