Recently UPDATED VERSION BELOW plus another couple of slightly different dressing recipes I use a lot as well!
Ingredients:
1 small garlic cloves, minced
1 Tbsp Dijon mustard
2 tsp honey
1/2 tsp sea salt
1/4 tsp pepper
1/4 cup fresh lime or lemon juice
1/4 cup red wine vinegar, white wine vinegar, or a mix of both
1/2 cup extra virgin olive oil
Instructions:
1. In tall measuring cup add all salad dressing ingredients.
2. Using immersion blender, purée until smooth. You can also do this in a food processor. This makes around 2 cups of dressing.
3. Transfer to jar. Shake well before drizzling on salad.
A slightly different alternative I love that’s creamier from more mustard:
Ingredients
1 cup extra virgin olive oil
1/4 cup each of red wine vinegar, white wine vinegar and lemon juice. OR whatever you have on hand that totals 3/4 cup
3 tbsp Dijon mustard
1 tbsp honey
1 tsp sea salt
1/2 tsp pepper
1 tsp granulated onion powder
Directions
- Blend all the dressing ingredients together either with an immersion blender in a tall measuring cup until creamy, or a regular blender/food processor. An alternative is to shake really really well in a jar with a lid until creamy. Enjoy

1-2 minced garlic cloves
