Here’s a fun and healthy twist on Mexican Tacos. It has all the same toppings, but instead of meat, I use lentils. This is good if your vegetarian, or if you just need a meatless dish.
Here’s what I did!
Ingredients:
Directions:
1 onion, sliced
2 garlic cloves, minced
2 Tbsp olive oil
2 Tbsp of my homemade taco seasoning
1/2 tsp sea salt
1/8 tsp ground pepper
1 cup dried green (puy) lentils, rinsed
2 cups chicken stock or water (or vegetable stock)
Half of a 28oz can of whole tomatoes with liquid, crushing them with your hands.
Hard (or soft) taco shells.
Toppings: Shredded Cheese, sour cream/plain yogurt, guacamole.
Directions:
1. In a pan, heat oil over medium heat. Add onion and saute until softened, about 5 minutes. Next, add the garlic. and cook for about 1 min.
2. Add the taco seasoning, salt, pepper and lentils. Stir for 1 minute.
3. Add the stock and tomatoes. Bring to a boil, then simmer for about 20 minutes, until lentils are tender and its not too liquidy.
4. Place lentil filling in tacos, add your desired toppings and enjoy!
*You can even enjoy these lentils over rice!
