Raita

 

Ingredients:
1 cup shredded, seeded cucumber
1/4 tsp kosher salt

1/4-1/2 tsp cumin seed, toasted and ground
1/4-1/2 tsp coriander seed, toasted and ground

1 1/2 cups (strained overnight) Balkan style yogurt
1 tsp fresh lemon juice
1 small garlic clove, minced
3/4 tsp kosher salt
1/4 cup chopped fresh mint leaves

Paprika and mint leaf for garnish

Instructions:
1. In a drive, place shredded cucumber with 1/4 tsp kosher salt. Let sit for 30 min. Squeeze all the liquid out of the cucumbers. Set aside.
2. In a pan on low heat, toast the cumin and coriander seed, then grind to a powder. Set aside.
3. In bowl, place yogurt, cucumber, ground spices, salt, lemon juice, garlic and mint. Mix well.
